Sam's ThunderPimp Chili

This is for anyone going to Mazzy's Annual Chili Cookoff. This would win, trust me..


ThunderPimp Chili
1/2 lb of butter, melted (note: this is not a particularly "heart healthy" dish)
8 cups onion, chopped
2 cups green bell pepper chopped (or minced, if I do it b/c I don't like biting into bell peppers)
2 cups celery chopped
4 jalapenos, minced
2 cloves garlic, minced
3 lbs diced smoked brisket (note: you can really use any kind of meat you'd like, but in our experience, a good smoked brisket chopped into 1/2 inch pieces is pretty divine..)
3 ounces of Two-Alarm chili mix
1 cup beef stock
2 quarts diced tomatoes
salt (to taste)
1 tblspn meat magic (recipe to follow)

in a big chili pot, melt the butter and cook the onions, peppers and celery til the onions are see-through. Add the jalapenos, garlic, meat magic and Two-Alarm chili mix and cook for 10 minutes. Add the brisket, beefstock and diced tomatoes and simmer for 1-2 hours, stirring often (til it seems right).

Added step for Pimps of Thunder*:
After about 45 minutes, we'll usually take 1/4 to 1/2 of the chili, put it in a second pot and make it REALLY Thunderpimp, which in Sam-ese means you add a couple of drops of Pure Cap (pure capsaicin oil) to it. SAFETY ALERT!--if you take this step, do NOT stand over the pot while it simmers, as it will cause you to start coughing uncontrollably and/or have trouble breathing and will feel like you just inhaled Mace (which you sortof just did)...not that I have ever done that (recently).

*The extra Thunderpimp-age is not recommended for anyone with a heart condition, working bowels and/or esophagus. All the normal people usually eat the undoctored version.

To serve:

get snack-size Frito bags
shredded cheddar cheese
chopped green onion
sour cream

split the Frito bags open, add chili and garnish at will.

Meat Magic** this is great for any kind of grilling/seasoning and lasts a long time:
1/2 cup flaked salt
4 tablespoons black pepper
2 tablespoons white peper
1 1/2 teaspoons cayenne pepper
2 tablespoons granulated onion
1 1/2 teaspoons ground cumin
1 1/2 teapoons sage
4 tablespoons dry granulated garlic
2 tablespoons paprika
1 1/2 teaspoons thyme

mix all together and keep it tightly sealed in a glass jar

Thanks for the recipe and the birthday wish. I'm making "my" Ambush chili which won last year and now I'll probably brew up thunderpimp as well and will send any winnings that way.

Oh I would love to be there, I just don't want to be involved in any of the 8 hour drive to getthere...

I checked out Zmann. It's much too over my head. Like, the word "dog" isn't anywhere on there.. :)
